Summer Recipes

You may be wondering… hmmm real estate company writing about Summer recipes? That’s odd…. Well, maybe it is but hey, we all gotta eat! Why not share our favorites with our friends and families!?

Juice

Favorite way to start mornings is by freshly made juice! This fresh sweet juice is perfect for any time of day during those blistering summer days. If you want to get started juicing, the first thing you will need is… obviously… A juicer!  It’s simple and healthy too!

½ Whole large seedless watermelon

1 large cucumber 

½ large lemon

TIP: Add mint leaves for a great mocktail or of course turn into a fresh summer cocktail

Breakfast

Porridge Bowl 

You will need: 

  • 1 Cup of Frozen Raspberries
  • ½ Banana 
  • ½ Orange Juiced 
  • 1 Cup of Porridge Oats 
  • ½ Cup of Almond Juice 
  • 2 Tbsp Almond Butter 
  • 1 Tbsp Chia Seed 

Directions: 

  •  Pour ½ cup of raspberries and ½ cup of orange juice into a pan. Simmer until raspberries soften. 
  • Once softened, stir in the oats, milk, and 2 cups of water into the pan. Heat on low until creamy. 
  • Once heated, pour into bowl.
  • Top with remaining raspberries, banana, almond butter, and chia seed. 
  • ENJOY! 

Lunch/Dinner

Spaghetti Squash Burrito Bowl

You will need: 

  • 1 Spaghetti Squash 
  • 1 tsp of Salt 
  • 1 tsp of Pepper 
  • 1 tsp of Garlic Salt 
  • Grape Tomatoes
  • Bell Pepper 
  • Diced Onion 
  • Avocado 
  • Cheese 

Directions: 

  • Cut the squash in half lengthwise and scoop out the seeds using a spoon. 
  • Using a microwave-safe dish, place both halves of the squash face down in the dish. 
  • Poke a few holes in the squash using a fork then microwave on high for about 12-15 minutes until the shell of the squash has softened.
  • Take the squash out of the microwave and flip it over and allow it to cool for about 15 minutes. 
  • Once cool, add salt, pepper, and garlic salt and use a fork to fluff spaghetti strands from the sides of the squash. 
  • Mix all your veggies into the “bowl” and put some cheese on top. 
  • ENJOY! 

Dessert

Strawberry Cheesecake Bites 

You will need: 

  • 12 large strawberries
  • 8 oz of Cream Cheese 
  • ½ cup of Powdered Sugar 
  • 2 tsp of vanilla extract
  • ¼ cup of graham cracker crumbs

Directions: 

  • In a large bowl mix together cream cheese, vanilla extract, and powdered sugar until smooth. 
  • Put the mixture in a piping bag with a round tip. Set aside
  • Cut the tops of the strawberries and use a sharp knife to make the insides hollow. 
  • Fill strawberries with cream cheese filling and place on baking sheet 
  • Place graham cracker crumbs into a shallow bowl and dip the filled side of the strawberries into the graham cracker crumbs. 
  • Refrigerate until ready to serve and ENJOY! 

Dog Snack

Let’s not forget about our furry friends and their bellies!

Pupsicles

You will need: 

  • 1 ½ cup of Plain Greek yogurt
  • 1 cup Fresh Blueberries 
  • Ice tray

Directions: 

  • In a medium bowl mix together greek yogurt and blueberries (If you would like to mix them in a blender that works too). 
  • Fill up the ice tray with the mixture. 
  • Place in the freezer until frozen. 
  • Your fur babies will love them! 🙂
